INGREDIENTS
1 Shallot
1 Clove of garlic
125g Mushrooms
200g Broccoli
250g Porcini mushroom tortellini
400ml Vegetable broth
50ml Heavy cream
30g Parmesan cheese
METHOD
1. Melt 10g of butter in a casserole. Then add the finely chopped shallot and minced garlic.
2. Sauté for a minute, then add the sliced mushrooms. Leave for 2-3 minutes, and when they start to brown, add the broccoli florets, tortellini, and finally the broth.
3. Cover it and let it cook for 10 minutes over low heat (once it resumes boiling).
4. When ready, add the cream, parmesan, and a bit of pepper (salt if needed). Gently mix.
5. Let it rest for a few minutes off the heat with the lid on, so that pasta can absorb the cream.
TIP
Serve with a crusty garlic bread or warm buttered baguette.
