INGREDIENTS
¾ cup room temperature water
1 tsp yeast
1 tbsp sugar
½ cup raisins
½ tbsp cinnamon
Pinch of salt
1 + ¾ cup plain flour
METHOD
1. Soak raisins in water for 10 minutes.
2. Add all ingredients to the bowl of a stand mixer.
3. Mix until a soft dough forms.
4. Scrape the dough to the bottom of the bowl, cover with cling film, and let it rise until doubled in size, about 2 hours.
5. Preheat a casserole dish in an oven set to 230°C (450°F).
6. Tip the dough onto floured parchment paper, flour the top, and score with a large cross.
7. Carefully place the dough and parchment into the preheated casserole dish.
8. Bake with the lid on for 20 minutes.
9. Remove the lid and bake for an additional 5 minutes, or until the bread is browned and sounds hollow when tapped on the bottom.
10. Leave to cool for at least 1 hour before slicing.
TIP
For a cinnamon swirl effect, roll out the dough into a rectangle, sprinkle with a cinnamon-sugar mixture, then roll it up tightly before placing it in the loaf pan.
