INGREDIENTS
1 Tbsp. olive oil
1 lb. sweet Italian sausage, casings removed
2 cloves garlic, chopped
2 cups chicken stock
2 cups marinara sauce
1 can diced tomatoes, drained
8 oz. lasagna noodles, broken into large pieces
Fresh basil, roughly chopped, plus more for garnish
1/3 cups ricotta
4 oz. mozzarella, coarsely grated
2 Tbsp. grated Parmesan

 

METHOD

1.    Preheat the broiler. In a 12-inch cast-iron skillet, heat the oil over medium heat.


2.    Add the sausage and cook, breaking it apart with a spoon, until it starts to brown, about 4 to 6 minutes. Stir in the garlic and cook for another minute, until fragrant.


3.     Pour in the chicken stock, marinara sauce, and tomatoes. Nestle the pasta pieces into the broth mixture and bring everything to a boil.


4.     Reduce the heat, cover, and let it simmer for 4 minutes. Then, uncover and continue to simmer, stirring occasionally, until the pasta is tender, about 10 to 12 minutes.

5.     Remove the skillet from heat and gently fold in the basil. Top with ricotta, mozzarella and Parmesan.


6.     Place under the broiler and cook until the cheese is golden brown, about 2 to 3 minutes.

TIP

For an extra burst of flavor, try browning the sausage a bit longer until it develops crispy edges before adding the garlic. This adds a rich, caramelized depth to the dish.
